Val Gerola

Val Gerola is a lateral valley of Valtellina, in the north of Lombardia, and it’s Bitto cheese motherland.

When this cheese achieved the DOP certification, DOP label’s procedural guidelines were a little bit different from the ancient method.

As a consquence Storico Ribelle cheese born, the idea of some producers and shepherds was to keep producing their cheese using the traditional method.

Storico Ribelle ( the translation would be Historic Rebel ) name is self-explanatory and It got the Slow Food  Presidium thanks to its unique taste and passion behind!

Another stunning aspect of this cheese is that it’s always different in terms of organoleptic qualities; that’s due to geologic and geography differences between alpine pastures where the milk comes from.

BBOI has also found some cellars in Val Gerola where you can find all the cheeses produced by shepherds, they are collected and aged there. Here below you may find related pictures which shows cellars’ precious content.

You can also carve the cheese with your name! As you can see in the pictures some cheeses are engraved with the name of the person who has booked them.

So…you just need to taste it with Polenta Taragna and Sciatt, Valtellina’s typical dishes!
