Rosa dei Monti

Is it possible to have an unforgettable dinner in a lonely but fantastic Italian mountain valley ? YES IT IS and to have this special experience, the Val Soana must be reached by car going through its “tormented” road. Tormented because this alpine valley is very narrow and with deep and steep slopes. Val Soana is located in Piemonte region, inside Parco Nazionale del Gran Paradiso near the border with Valle d’Aosta region, so in a gorgeous place. At its end where high mountains (more or less 3000 meters of altitude) close any possibility to go ahead with the car, there is a tiny village named Piamprato and here Rosa dei Monti chalet is located.

The restaurant of this chalet is very simple and teeny, as it must be in a mountain valley like that, but the chef and his food are fantastic. So the experience to have a dinner at Rosa dei Monti chalet cannot be missed. Here below the description of some dishes prepared by the chef.

As starter in a unique plate has been served: fennel with nuts and apple, Mocetta (a kind of cured meat peculiar in Valle d’Aosta and in some parts of Piemonte) with pieces of Grana (a fantastic Italian cheese), anchovies (typical food in Piemonte for very ancient reasons) and Lardo (a particular cured meat especially in some Italian regions like Piemonte and Valle d’Aosta) with chestnuts.

As first course Gnocchi con Aglio Orsino have been tasted. Gnocchi done with potatoes are then mixed up with a sauce of Aglio Orsino, an aromatic herb with the flavour of garlic but completely different.

As second course, in mountain Polenta cannot be missed. This food can be done in several way using different flours, but the classic Polenta made with corn flour has been tasted in Rosa dei Monti chalet escorted with Spezzatino (cow meat specifically cooked) or as a good alternative with Salsiccia (sausages).

Along with the dinner, wine is always very important and many Italian types can be chosen in the restaurant visited. Furthermore wines from Piemonte region are so famous all around the world. But a bottle of wine from Valle d’Aosta has been tasted because it has a unique and very special flavour and its grapes grows up only in a specific place named Arvier. It seems that the origin of this wine comes from year 1300 ! The experience at restaurant of Rosa dei Monti chalet in Val Soana has been closed with two fantastic desserts.
